Ingredients

  • ½ cup Wonderful Pistachios No Shells Jalapeño Lime, divided
  • 2 cups fresh cilantro
  • 2 cloves minced garlic
  • ⅓ cup + 1 tablespoon extra-virgin olive oil, divided
  • Lime zest and juice, from 1 lime
  • 4 (5 ounce) skin-on salmon fillets, about 1–1½" thick
  • 1½ pounds small potatoes, halved
  • ½ teaspoon kosher salt, divided
  • ¼ teaspoon ground black pepper, divided

Instructions

  1. Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper.
  2. Combine cilantro, garlic, olive oil, lime zest, and lime juice in a small food processor and pulse until well combined. Transfer half of the mixture, reserving the rest, to a large, resealable bag and add the salmon. Remove air and seal the bag. Marinate for 20 minutes in the refrigerator.
  3. Meanwhile, add ¼ cup pistachios to the reserved marinade in the food processor and pulse to combine. Transfer to a bowl and set aside.
  4. Toss potatoes with ¼ teaspoon salt, ⅛ teaspoon pepper, and the remaining 1 tablespoon oil in a medium bowl. Spread out on the prepared baking sheet and roast for 15 minutes.
  5. Remove the baking sheet from oven, stir the potatoes and then move them to the sides of the pan. Remove salmon from marinade, tapping off any excess, and arrange in the center of the pan, skin-side down; discard marinade. Season with remaining ¼ teaspoon salt and ⅛ teaspoon black pepper. Bake until the potatoes are tender and the salmon flakes easily with a fork, about 15 minutes.
  6. Add salmon and potatoes to plates and garnish with reserved pistachio mixture and remaining pistachios and serve.
