Ingredients

  • ½ cup Wonderful Pistachios No Shells Lightly Salted, roughly chopped
  • 1 English cucumber
  • 1 tablespoon soy sauce or tamari
  • 2 teaspoons chili crunch
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon maple syrup
  • 1 teaspoon toasted sesame seeds

Instructions

  1. Use a knife or mandoline slicer to carefully slice the cucumber into a meal prep container or deli quart container. It should make about 2 cups sliced.
  2. Pour over soy sauce or tamari, chili crunch, sesame oil, rice vinegar, garlic, maple syrup, and sesame seeds. Shake until combined.
  3. Place in the fridge and marinate for one hour, or you can enjoy right away.
  4. Before enjoying, top with chopped pistachios for crunch.
