Ingredients

  • 1 cup Wonderful Pistachios No Shells Jalapeño Lime, plus more for garnish
  • 2 garlic cloves
  • 1 can (15 oz.) chickpeas, drained and rinsed
  • ¼ cup packed fresh cilantro leaves, plus more for garnish
  • 2 tablespoons tahini
  • 2 tablespoons extra-virgin olive oil, plus more for garnish
  • 2 tablespoons lime juice
  • 1 teaspoon cumin
  • ½ teaspoon flaky sea salt, plus more for garnish
  • Water, as needed (start with 2–3 tablespoons and adjust for desired consistency)

Instructions

  1. In a food processor, combine pistachios and garlic. Process until finely ground.
  2. Add chickpeas, cilantro, tahini, olive oil, lime juice, cumin, and salt. Blend until mostly smooth.
  3. Add water – one tablespoon at a time – to achieve your preferred hummus consistency. Taste and adjust seasoning as needed.
  4. Transfer to a serving platter and garnish with a drizzle of olive oil, chopped cilantro, flaky sea salt, and more pistachios.
  5. Serve with tortilla chips, pita chips, fresh veggies, or any other dippers you prefer.
