Ingredients

  • ½ cup Wonderful Pistachios No Shells Jalapeño, chopped, divided
  • 8 large jalapeños
  • ⅓ cup Neufchâtel cream cheese, softened
  • 2 cloves garlic, finely minced
  • 1 green onion, thinly sliced
  • ¼ cup fresh cilantro, finely chopped
  • 1 ½ cups shredded sharp cheddar cheese, divided

Instructions

  1. Preheat oven to 375°F and line a large baking sheet with parchment paper.
  2. Slice jalapeños in half lengthwise and use a spoon to scoop out the seeds and white membrane (use gloves to protect your hands from capsaicin, which can irritate skin).
  3. Combine the cream cheese, garlic, onion, cilantro, ¼ cup pistachios, and 1 cup of cheddar cheese in a medium bowl. Fill jalapeño halves with mixture and place on prepared baking sheet. Cover each with cheddar cheese and bake until cheese is lightly browned and melted, about 20 minutes.
  4. Garnish with remaining ¼ cup pistachios and serve.
